Making Miniature Flowers with Polymer Clay by Barbara Quest provides detailed instructions that allowed me to compensate/adapt as I made gorgeous flowers for table center pieces for a co-worker's wedding.

These are not cut from canes but are built by pieces and layers. I found Barbara's directions and the book's illustrations to be extremely user friendly.
